Living Lab Spotlight: Kooperatywa Dobrze

Within InnOFoodLabs, the Polish Living Lab – Kooperatywa Dobrze, supported by the Warsaw University of Life Sciences (SGGW), is working on two innovations that aim to strengthen local organic food systems, short supply chains and community engagement.

Kooperatywa Dobrze is Poland’s largest food cooperative, connecting consumers in Warsaw directly with organic farmers and small-scale processors from the surrounding region. Building on this community-based model, the Living Lab is exploring new ways to bring organic food to institutional kitchens and to communicate the benefits of organic food and short supply chains more effectively.

The Living Lab is working on several innovations, including the following points, among other things:

• Developing new sales channels for local organic food by connecting organic producers with private kindergartens, schools and other institutional kitchens

• Developing and testing a cooperation model for collective catering, with the long-term goal of increasing the share of organic food in public institutions

• Finding practical solutions for logistics, menu planning and cost optimisation to make organic food more accessible for professional kitchens

• Strengthening short supply chains between organic farmers, small-scale processors, the cooperative and institutional customers

• Developing educational activities around organic food, sustainable diets and food waste, including workshops and farm visits
